Just a reminder to all ramen fans! Pork bone broth is "TONKOTSU", NOT "TONKATSU". TonkAtsu is breaded deep fried port cutlet, not pork bone broth!!
Hint: If a server says Tonkatsu Ramen at a restaurant, don't expect authentic ramen. Ton = Pork🐷, kotsu = Bone🍖

Yokoya - Lower East Side, NYC

Ramen shop opening in April 2017 with their take on Yokohama ramen. Soup is similar to Ie-Kei ramen soup, with spinach, nori, chashu and ajitama. They even recommend to add vinegar like some of the Ie-Kei ramen shops, but the noodles are thin noodles, unlike the Yokohama Ie-Kei style which are thick noodles. I guess they are catering to the US customers where thin is more common. I personally would have liked it with thick noodles.
